It all starts with a fluffy mango mousse base, topped with a mango compote then dipped in a thin layer of Callebaut milk chocolate & feuilletine. This June feature will have you asking us to keep this longer than for just 1 month.

Ingredients:

Base: White Flour, Unsalted Butter, White Sugar, Milk Chocolate, Whole Eggs, Almond Flour, Baking Powder.

Base Mousse: Cream, white chocolate, mango puree, cocoa butter, bovine gelatine, lemon zest.

Mango Compote: Diced mangos, mango puree, sugar, lemon zest, corn starch, bovine gelatin.

Dipping Chocolate: Callebaut milk chocolate, cocoa butter, feuilletine.

Whipped Ganache: Cream, Callebaut milk chocolate, mango puree, invert sugar, glucose.

Finish: Crystal neutral glaze, water, white chocolate with green food color
