Founded by Edmonton-based chef, Roger Letourneau, Lessig Ferments produces beer vinegar, hot sauce and other condiments.
In Canada, many of the farmers who understand terroir are often stalled at the processing level, a weak link in our food system. At Lessig Ferments, their goal is to bridge that gap by translating the bounty of our short growing season into artisan products via fermentation and preservation. They use specific methods and choose ingredients at the peak of their season to help preserve nutrients and enhance natural flavours.
