We’re very excited to use fresh local Horsehill Berry Farms raspberries in our baked goods again this year!! Our amazing pastry team has created the perfect Edmonton summertime dessert. It’s a combination of a pistachio-almond sponge, vanilla mousse, pistachio praline, raspberry coulis, Valrhona raspberry chocolate, whipped cream, and fresh Horsehill raspberries. It’s light, it’s crunchy, it’s raspberry sweet, it’s perfect!

Sponge: Whole Eggs, Almond Flour, Unsalted Butter, Icing Sugar, Pistachio Paste, Crushed Pistachios.

Mousse: Full Cream, Milk, Whole Eggs, White Sugar, Bovine Gelatin, Winnipeg Cream Cheese, Vanilla Bean Paste

Raspberry Coulis: Raspberry Puree, White Sugar, Bovine Gelatin.

Topping: Whipped Cream, Valrhona Strawberry Inspiration Chocolate, Fresh Raspberries, Gold Leaf.
